Ingredients
1 tbsp. coconut oil
1 large onion, chopped
2 garlic cloves, crushed
10.5 oz. (300g) mushrooms, sliced
1 lbs. (450g) spinach leaves
4 eggs
Handful of chopped parsley
Preparation
Step 1
Heat the coconut oil in a large pan over medium heat. Add the onion and garlic, cooking for 2-3 minutes until soft, stirring occasionally.
