Ingredients

  • 2 large Portobello mushroom caps


  • 1/2 cup Rao’s marinara sauce


  • 1/2 cup low-fat shredded mozzarella cheese (or a dairy-free alternative)


  • 10 turkey pepperonis


  • 1/4 cup diced bell peppers


  • 1/4 cup sliced black olives


  • 1/2 teaspoon dried oregano

Preparation

Step 1

Preheat your oven to 400°F (200°C).


Step 2

Clean the Portobello mushroom caps and remove the stems. Place them on a baking sheet, gill side up.


Step 3

Spread 1/4 cup of marinara sauce on each mushroom cap.


Step 4

Sprinkle 1/4 cup of shredded mozzarella cheese on top of each mushroom.


Step 5

Distribute the turkey pepperoni, diced bell peppers and sliced black olives evenly over the cheese.
